I don't think anybody is silly enough to fall for this, all I'm saying is don't get your hopes up in the initial mails...it'll end up like this.&lt;br /&gt;&lt;br /&gt;Today I was targeted by a group in Cameroon trying to profit from people who have lost their pets. I have not sent them any money and I have notified &lt;a href="http://petsonthenet.co.nz/" target="_blank"&gt;petsonthenet.co.nz &lt;/a&gt; (where I was contacted) about the incident. As I am unsure who else to contact, I will attach the e-mail correspondence here, and hopefully this scheme can be blacklisted, as it caused a lot of distress for me.&lt;br /&gt;&lt;br /&gt;My cat has been missing for a month and tonight as I was working I got an e-mail replying to an advert I'd put up on petsonthenet which is a New Zealand ad listing for lost pets. They said that they'd just come back from the home of a lady who had our cat and I should get in contact with her. So they gave an address, and I thanked them and contacted this lady. We were very excited but cautious...we hadn't heard anything for a month, we wanted it to be true but it almost seemed too good to be true.&lt;br /&gt;&lt;br /&gt;Very soon it became apparent that something wasn't quite right. The person we contacted didn't leave any phone number, and the english was somewhat off. Not only that but it was a really bizarre name that wasn't listed in the New Zealand white pages. I decided to use trusty old google to find out who this person was. They said that they worked for an international courier company and a man had been apprehended trying to smuggle our cat out of the country.&lt;br /&gt;&lt;br /&gt;The first link I found was somebody else who had a missing pet and had been contacted by this person. Instantly I knew my suspicions were correct. The e-mails I was getting back from these people didn't correspond to the physical address listed for the company in New Zealand. Not only that but previously this person had apprehended a pet going across the channel from France to Britain. Way to be in two places at once!&lt;br /&gt;&lt;br /&gt;A little more digging and I hit the jackpot. On the fraud prevention forums, there was a huge thread about scammers selling pets from Cameroon. Not only that but my e-mails were getting more and more suspect. They said they had taken pictures of the pet I had asked for, but the 'manager' of their unit wouldn't let them send the pictures. How convenient. Trying to dig out more information we sent a fake address to them to find out how much money they wanted us to send for the 'safe return' of our pet. Pfftsh, how thick do they think we are?&lt;br /&gt;&lt;br /&gt;These people are scum. Absolute scum. I don't understand how two people can make such a mess to be honest. We have yet to put the floor down and I'm getting very frustrated by the lack of progress on our business. We have the planks of laminate flooring stacked up against the wall and our bedroom is filled to the brim with magazines, boxes, rugs, you name it. So yes, the house is filthy, dirty, in disarray and my fragile mental state cannot handle it.&lt;br /&gt;&lt;br /&gt;My sleep is always interrupted, for the past few days I haven't completed a full 5 hour sleep cycle. Oliver comes to bed late after watching movies or television which wakes me up. Then Smella (our cat, Ella) will scrape and scratch away inside the enclosed litter tray, emerging with shit all over her paws and backside. This happens around 5-6 A.M. After I run around trying to catch her, I have to wake Oliver who moans and groans and generally gets violent. After we clean her and dry her then she will come under the covers making a big damp patch on the sheets. If I manage to go to sleep then it will be interrupted by James wanting food and to be let outside. So 8:30A.M I get up and give James (our other cat) his breakfast and let him out.&lt;br /&gt;&lt;br /&gt;Then the builders arrive.&lt;br /&gt;&lt;br /&gt;They've been building houses at the back of our house for 7 months and boy are these builders slow. Sometimes if they're feeling rowdy they'll turn their radio on so loud that you would be forgiven for thinking there was a Wembley concert outside. So, weary, I trudge up the stairs and crawl back into bed where I fail to complete a 5 hour cycle as that would seriously eat up my day. I spend the rest of the day looking longingly at the bed or any soft surface that will take me. Repeat the process again....and again...and again.&lt;br /&gt;&lt;br /&gt;So mess + lack of sleep + pressure to build this business and fulfil all the duties expected of me are taking the toll. Did I mention lack of money? Oh yeah. I have none.&lt;br /&gt;&lt;br /&gt;In other more positive happy news, I have started studying Japanese with the help of two friends, one old and one new. The old friend is Bevan who moved to Japan with his girlfriend Chihiro last year. The other is a new friend I met at a Japanese manga library in Auckland center, Emiri. Today I went in and she helped me read a hiragana learning book for 3 year olds. She even set homework. Emiri you're a hard taskmaster. Mistress. Sitting at my computer I had a sudden craving for something very savoury. Being tired and too lazy to go to the supermarket (it was midnight) I asked Oliver to get me some Balsamic Vinegar and Onion crisps. BIG MISTAKE. He came home with 2 huge packets of these crisps and they were gone in minutes. Yes minutes. The worst part was, I kid you not, after only about 10 minutes I felt something sore in my mouth. I'm sure a doctor would tell me this was impossible but an ulcer had appeared. Not only that but my tongue was grated from the excess salt in the crisps. I didn't even feel satisfied afterwards.&lt;br /&gt;&lt;br /&gt;Cradling a bowl of quinoa soaked in homemade vegetable stock with lightly seared capsicums and onions, I decided never again to make that mistake. The quinoa was delicious, light enough to be snacky, savoury enough to satisfy my cravings and didn't come with a sense of guilt.&lt;br /&gt;&lt;br /&gt;Of course I'll make the same mistake next week or the week after but for now I can hope.&lt;br /&gt;&lt;br /&gt;Last night I had orange kumara with nacho mix again. I love the combination of sweet soft potato with a very savoury sharp nacho mix. Due to the amount of oil in it, probably not the healthiest option but who knows, maybe I can wean myself off the oil.&lt;br /&gt;&lt;br /&gt;Today I got up early and prepared the dough to make some pita bread. I'm aching from 10 minutes of kneading, hopefully the pita bread will turn out well. Still no camera. Brand name chargers are just so ridiculously expensive and generic chargers are just useless. Hopefully I can beg, steal or borrow (okay not steal) a charger some time in the not too distant future.&lt;br /&gt;&lt;br /&gt;I can't really recall what happened in the past few days. James went missing on Sunday afternoon. We were worried sick when he didn't come back for his dinner (around 6-8pm). When he wasn't back by midnight, we were panicking even more. After multiple searches we gave up around 2:30am and went to sleep. The next morning he still wasn't back which spawned another series of searches in the blistering heat (isn't it winter?) to no avail. Finally, he came back in the evening, ate a lot of food and went to sleep until the next morning. Who knows what he got up to out there.&lt;br /&gt;&lt;br /&gt;My work visa was only granted for 7 months which I'm really disappointed about. I thought I was applying for 2 years and wouldn't have to worry about the whole application mess for a while. It cost me $1900 so I am incredibly disappointed. I would have received more time if I had applied on my own and I would have saved $1400.&lt;br /&gt;&lt;br /&gt;Client had a bit of a spazzy at us, it's true what they say, the people who pay the least are always the most demanding clients. They have no sense of value and turn into two headed monsters, demanding and trying to get their own way. We lost money on this client, we lost time. We can't set up our studio until their wedding is finished. We tried to make something nice for them and we got a very rude "not negotiable" to their terms. We were so disappointed and upset that all the work we had done for them was deemed "unacceptable" and "worthless"and that now we have to keep working on their DVD and not being able to continue with our business.&lt;br /&gt;&lt;br /&gt;Recent food? Roasted golden kumara with nacho mix, very delicious. A fantastic 'butter vegetable curry' made by Oliver himself. I resolved to go back to the basics.&lt;br /&gt;&lt;br /&gt;It just makes sense. I'm a fussy eater and even though my parents are gourmands, I never embraced more exotic flavours. I'm going to try to make great simple food, with as little packaging involved as possible.&lt;br /&gt;&lt;br /&gt;Today, I had planned to indulge and have a long nap. Alas, it wasn't to be as I heard my cat scratching on the floor and realised with an inward groan that she had once again managed to get shit all over her ass. So I got up, cleaned her and then set out to do the chores. I had 5 full loads of washing to do as Auckland had been very rainy preventing us from doing any laundry. It was a beautiful day and I managed to get everything on the line and dried by 4pm.&lt;br /&gt;&lt;br /&gt;While I was waiting for the laundry to dry I set up a pot full of roughly chopped vegetables on their way out and set them to simmer in water so I could have a freshly made home stock. The smells filling the house were delicious (and look ma, no packaging!). After 3 hours the stock was ready although perhaps it didn't make as much as I had anticipated. I need a bigger pot!&lt;br /&gt;&lt;br /&gt;I took the leftover vegetables, discarded the onion skins (they make the stock go brown for those who don't know, and help preserve the delicious onion flavour) and blended them into another soup base. Again, no packaging! On a roll I managed to do a weeks worth of stacked up washing which Oliver had been promising to do but obviously hadn't. Played with my two cats, swept the floor, threw away rubbish...&lt;br /&gt;&lt;br /&gt;And now I have to make dinner. I have a craving for gnocchi even though I can't afford it. I think I'll try a mushroom dish with quinoa and cashews.&lt;br /&gt;&lt;br /&gt;Last night's dinner was a huge success, a whole wheat pasta tomato dish. The secret ingredient? Not that secret. Beer! Yes I know not all beer is vegetarian. To be honest none of them list ingredients. I think I read somewhere that the brand I bought is not clarified with animal products, on Monday I will call each brewery and ask what clarifying method they use. I fried up some nutmeat with garlic and onions, then let it simmer in the beer which made the nutmeat sweet with a hint of sharpness. Then added in freshly chopped tomatoes and tinned italian tomatoes. A bit of brown sugar and vegetable stock and a lot of dried oregano finished it off. Very simple and light on the stomach. It kept me going all evening.&lt;br /&gt;&lt;br /&gt;My pudding was roasted unsalted cashews. Anyway as the title suggests, I got a 2 year work visa 2 days ago. I have yet to pick it up - I really should hurry and get my passport back. Now my efforts need to be concentrated on not only getting more work lined up for our fledgling business but also getting a part time job which will allow me to pay bills.&lt;br /&gt;&lt;br /&gt;I'm not sure where I'll work, one thing I do know is that I'm sick of working in places surrounded by downtrodden people who hate their jobs. I haven't ever worked with people who love what they do. This leads to so much bitchiness in the workplace, superiority complexes and more. This results in newcomers (usually me) being treated like simpletons, being bossed around and eventually dismissed.&lt;br /&gt;&lt;br /&gt;I'd love to work at the library, I love books. Love the quiet. I want to prove to an employer that I do enjoy working and that I have something to offer. Who knows where I'll end up.&lt;br /&gt;&lt;br /&gt;I'm struggling with the whole vegan thing lately. I know that I get into these moods pretty frequently - even when I did eat meat and dairy. Lately I feel as if my culinary skills have completely abandoned me. Whether it's because I have to rush out meals before Oliver goes to work or something else I don't know. Currently I am limited by a few things however:&lt;br /&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Lack of money. We're hit by large bills every week and can't really afford many ingredients. I love mushrooms, kumara and frozen goods such as veaty bites but they're all very expensive. Tasty whole grain pastas, rice and gnocchi are also out of my reach.&lt;/li&gt;&lt;li&gt;Having to cook for 3 people. I am terrible at increasing portion sizes which usually results in the meal not tasting very good.&lt;/li&gt;&lt;li&gt;Not buying packaged goods. I've been on a resolve to buy as little packaging as possible. I put fresh vegetables into our eco bag and even though I get funny looks at the checkout counter when I unload them, I feel better not taking pointless plastic home with me. I only buy things in cans when I have to, they can be recycled and I avoid most things in any sort of plastic. So the whole 'convenience food' thing is out for me, most convenience foods are in plastic.&lt;/li&gt;&lt;/ol&gt;I really don't want to give up, tonight I had a delicious sushi which didn't have a scrap of animal products in. It was fun being at the restaurant, sharing the table with a stranger, even with Celine Dion belting out over the speakers it felt very comfortable sitting there in such a small cosy room eating such tasty food. But I can't afford to eat out often and when I do the choices can be limited.&lt;br /&gt;&lt;br /&gt;I have to be a better cook otherwise I'll just go back to eating cheese. I love cheese. Don't get me wrong I won't just eat any cheese if I can help it but cheese just makes stuff taste good.&lt;br /&gt;&lt;br /&gt;Sigh. How do other vegans do it? Since it has been so sunny and quiet, I've been taking the time to play with James outside which he really appreciates - so much so that he won't stop demanding attention and I have to run around the house with string some more. I wonder what it looks like to outsiders - a crazy out of breath British girl running around the block of houses in her pyjamas with a ginger cat close behind. Still, it makes me happy to see how much progress we've made with him. Although he's still not a particularly 'friendly' cat (and will never be a lap cat) he is becoming more affectionate each day. Patience works wonders...&lt;br /&gt;&lt;br /&gt;So what has happened lately. Well, I still have no charger for my camera. The house is a pit of destruction. I'm just hoping that we can install the flooring as soon as possible so we can actually have a proper home office at last.&lt;br /&gt;&lt;br /&gt;Oliver blended some of my Kumara soup without the lid of the blender on. Funny, one would assume that this only happens in laundry powder commercials, alas, it was real enough. While Oliver moped with his now cooked arm stuck underneath the tap, I mourned the loss of my cookery books which had tragically perished in the spill.&lt;br /&gt;&lt;br /&gt;James somehow managed to get crap all over him (a first) and Oliver braved 10 minutes of washing it off. James, I must say, behaved brilliantly. I just hope that he doesn't do it again.&lt;br /&gt;&lt;br /&gt;Anyway we STILL haven't finished all the wedding work and I feel terrible about it. I know it's due to me slacking in part, the rest is down to either a lack of skill or a lack of resources. Yep, the two biggest petroleum companies have decided that in order to be 'environmentally friendly' they're going to use ground up animals and mix it as a biofuel into regular petrol. Sunday was the Wedding Expo which was being held in Ellerslie and so we had to get everything together very quickly. Oliver and I are very disorganised, we try but often fail to avoid this nasty tendancy. After a series of very late nights, I vowed on Saturday to go to sleep at 12, everything was going relatively well, but then another look at the clock revealed that it was already 2:30. What? Good intentions out of the window. I finally managed to fall asleep around 3:15 and then was woken at 6:15 with our alarm. Crawling out of bed at 6:40 (and inevitably making us late), had a freezing cold horrible shower and then had a mad dash to get everything in the car. We had intended (bless our little naive hearts) to be at the expo by 7 to get set up but we had two major setbacks:&lt;br /&gt;&lt;ol&gt;&lt;li&gt;We had a velcro partition to put up our poster and we had a full pack of velcro strips in the house. But the night before we had turned the house upside down to no avail. Those little buggers were nowhere in sight.  The showground rules were that no stand could be assembled past 8:30AM and it was already 7:45 by the time we left. Not only that but only one place we knew sold these velcro strips. And it opened at 8:30.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;We had no idea that we weren't given a table with our stand. No table. Nothing. And as Sod's Law would have it, hardly anything would fit in our car.&lt;/li&gt;&lt;/ol&gt;Which resulted in a very stressed few trips back and forth trying to get ready in time. We were set up, minus poster, by about 8:40 but then had another problem. The DVD menu Oliver had made for our showreel was wildly off center. Not only that but it played for so long that the majority of people woudn't see any footage - only a rushed title screen. So every 7 minutes we had to fiddle around with the play button to try and avoid the menu - a (yep you guessed it) the remote was nowhere in sight.&lt;br /&gt;&lt;br /&gt;Still, all in all we had a good day. The cards went down really well with people and they were worth the $275. I'll try and take a picture once my camera is charged. I was sad that I couldn't take any pictures of our stand since my charger stopped working but at least we remember what it was like. We were next to a chocolate fountain which definitely gave me an idea for my birthday centerpiece. And to top it off the people there were really nice and gave me some fruit for breakfast as I hadn't had anything to eat that day.&lt;br /&gt;&lt;br /&gt;We got about 22 names written down and we think at least 2 of those may be interested. I don't understand Easter. I'm sorry but why do non-religious persons have to observe it again? Why should I have to sit around bored out of my mind for 4 days because legally, shops over a certain size have to be closed? I'm sure it's nice for school children but it screws with my deadlines. I now have 4 days to get this printing work turned around by Friday. Obviously - all the printers are closed. 4 days would be manageable - wait. Take off another two days. Unfortunately, and unusally, Oliver is working 9-5 on Tuesday and Wednesday. So no transport. And no means of getting to the printers except for a 7 a.m start and a hell of a lot of walking. It just seems we're fated to not get ready for this expo. So I'm angry at this archaic religious observation right now.&lt;br /&gt;&lt;br /&gt;My tofu pie didn't really go hard this time. It was more of a ...tofu mousse on top of biscuit. It's not that it tastes bad, I'm just wondering if I put in too much coffee. I also used a different chocolate which whipped brilliantly but then just didn't set in the fashion I intended. I think I'll mimic the old recipe next time. For dinner we had burgers, Oliver used too much garlic bolt and besides I lose my appetite when the kitchen is messy.&lt;br /&gt;&lt;br /&gt;And boy is it messy. It's not that Oliver's cooking drives me to tears because it tastes great. But the aftermath of the cooking is something to behold. I just don't understand how he does it. Not only that but Ed has done no cleaning for this house. I came downstairs this morning to find a horrible mess - broken plate on the floor, the living room re-arranged, receipts scattered on the ground along with popcorn and general dirt, parsley, onion peel and more dirt on the kitchen floor, plates in the sink, on the worksurface. Pans not put away. The laundry lying on the kitchen table. The rule in this household is, if the washing up spills out over the green tub intended for dirty dishes, then THE DISHES MUST BE WASHED. I'm more than happy to clean the contents of the green tub but I am not happy to come downstairs at 7:30am after a measly 4 hours of sleep (because the boys refuse to go to bed before 3am) to find this mess. The plates hadn't even been cleaned. There was a pot of rice pudding on the worktop, with 2 dirty bowls. In the lounge there were 2 more dirty bowls with residue from the tofu pie.&lt;br /&gt;&lt;br /&gt;I've had enough. I cleaned the house yesterday. Oliver helped, but it's getting too much. I feel as if I can't complain because I don't have a full time job, but I also don't like being turned into a housewife by two lazy boys, sorry. Men. Supposedly.&lt;br /&gt;&lt;br /&gt;It's just too much on top of everything else right now. I can't focus when the house is so dirty and so I'm unproductive until I get off my ass and clean up after everybody. By the time I'm done I'm too tired to work.&lt;br /&gt;&lt;br /&gt;Sorry for the rant. I'm feeling a little bit down because there's so much to do in the next 2 weeks it's weighing me down. And on top of that I have to look after 3 people (including myself) and 2 cats and believe me that's a full time job in itself. The cats are a nightmare, I get woken up by James making the most godawful vomiting noises and then Smella does a big crap and scratches  on the walls of the litter tray and steps all in it and then walks it around the house..so then we have to clean her. This is pretty much the daily routine.&lt;br /&gt;&lt;br /&gt;Last night we had an eggplant and tomato fettucine. Pretty nice, didn't cave in and put any cheese on it. I honestly don't know who could say tomato pasta is better without cheese unless they're kidding themselves. But it's still nice and good if you want a clean palette I guess.&lt;br /&gt;&lt;br /&gt;I've decided too to give up web design. I'm just no good. I'm too slow and I'm nothing special. The idea was to have slow roasted tomatoes and capsicums drizzled in basil olive oil, but I had to settle for a quicker wok version tonight. Oliver leaves for work at 6:15 so that gave me 45 minutes to cook dinner by the time we were done with the multi camera editing. I settled for a thin sweet wholemeal crust which has no rising time, and blended up a parsley, garlic and tomato sauce for the base. Because I knew the crust would be a little dry due to it not being allowed to rise for long, I added double the sauce to soften in the oven.&lt;br /&gt;&lt;br /&gt;I wok fried onions in a bit of brown sugar and mustard seeds to make a soft juicy relish and then added in the mushrooms, veaty 'chicken' bites and capsicums, with finely chopped fresh parsley. I don't like to overcook as it destroys the nutritional value so as soon as the veaty bites went a bit crispy, I threw the topping onto the pizza and did a quick bake at 180 degrees for 10 minutes, throwing the tomatoes on at the last minute to keep them crisp and fresh.&lt;br /&gt;&lt;br /&gt;The result was pretty good although the crust was a bit solid on the edges. It definitely worked without cheese and it's a recipe i'll use again. Pretty good, we didn't want to waste any ingredients left over from the stir fry a few days before so our shepherd's pie was a tad unorthodox. It didn't take much convicing to get Edward, the chef of the night, to add in Mung Beans, fresh Coriander and egg plant. The egg plant worked really well as did the Veaty Chicken Bites, a good example of TVP. The mashed potato was creamy and sweet and overall, even if the mung beans were stringy, it had an excellent flavour.&lt;br /&gt;&lt;br /&gt;For lunch today I made a delicious (if I do say so myself) kumara and onion soup. I'll give the recipe here.&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;2 brown onions&lt;/li&gt;&lt;li&gt;1 cup beef style stock (we use mansells). The general rule is 1 tbsp to 1/4 cup to make a strong broth&lt;/li&gt;&lt;li&gt;1/2 cup pinenuts&lt;/li&gt;&lt;li&gt;2 large golden kumaras&lt;/li&gt;&lt;li&gt;300-400mls vegetable stock&lt;/li&gt;&lt;li&gt;1tsp fine pepper&lt;/li&gt;&lt;li&gt;10 cloves garlic&lt;/li&gt;&lt;li&gt;A whole bunch of extra virgin olive oil&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;The best way to cok potatoes is in the microwave. Wash and scrub your taters and remove any stringy bits, then stab it and score the skin a bit with a knife. Rub over some salt and cook for 10 minutes. It will be perfectly soft and cooked, easy. So all you do is shove it all into a pan and simmer for 25 minutes on a medium heat. Then you get your food processor, shove in the amount you want to eat and blend. Serve with toasted brown bread and some olive oil spread. Really sweet and creamy and very filling. Not only that but we're eating later at night and so that means we don't have enough light to take good pictures.&lt;br /&gt;&lt;br /&gt;I guess the most recent meals are:&lt;br /&gt;&lt;br /&gt;1) Raw vegetable stir fry. Edward made this one, using very crunchy al dente green vegetables. Very tasty but a little bit too spicy. I had to wait until mine was cold and eat it the next day as a lunch.&lt;br /&gt;&lt;br /&gt;2) Nachos with Salsa Chips. Oliver just wanted to try out the magic bullet so this recipe varied a bit from the usual. To say it was liquified might be a bit of an understatement. I don't think he'll use the magic bullet for it again. Still, tasty. Avocados were very hard so we didn't have any guacamole, pity.&lt;br /&gt;&lt;br /&gt;3) Susan V's mini tofu quiches. Didn't bake properly at all because I used paper baking cups instead of silicon so the bottom burned and obviously they went flat as pancakes because the liquid was too heavy for the cups. Absolutely delicious, and I'm not even a tofu fan.&lt;br /&gt;&lt;br /&gt;4) Tofu chocolate cake. Used digestive biscuits and block chocolate since nowhere in Foodtown do they sell vegan chocolate chips. Wtf? Dark chocolate doesn't need milk in it. Whittakers has proven that time and time again by making delicious dark chocolate with no animal products. The same goes for Green &amp;amp; Blacks. So why can't other companies follow suit? Please, if you make dark chocolate, make it vegan! Otherwise as far as I'm concerned it's just not dark chocolate. Don't taint an otherwise good product.&lt;br /&gt;&lt;br /&gt;5) Homemade pizza. I made a dough but accidentally rolled out the dough which was meant for two pizzas, into one pizza. It resulted in an insanely thick crust. Edward loved it but Oliver and I weren't so sure.&lt;br /&gt;&lt;br /&gt;Mmm so that depletes my recent memory banks. Recently we tried Veaty Pandan Chicken bites, a delicious chicken alternative wrapped in pandan leaves. It's beautiful to look at so great if you're having a dinner party. They pale in comparison to Mock Chicken Nuggets but they're still nice.
